Woo hoo! It’s smoothie bowl week! What’s that, you ask? Well, each day this week (Monday through Friday) I’ll be sharing a favorite smoothie bowl recipe here and on social media. To kick things off, my first tasty treat is a very simple Berry Lemon Smoothie Bowl.
To be honest, smoothie bowls and I just started to become friends. I had never really given them much attention. It wasn’t until I was scrolling through my Instagram feed one day and was completely inspired. I don’t know if it was an “ah ha” moment or a “duh. Why haven’t I been making these?” moment. Either way, I was blown away by these gorgeous, delicious creations.
Aside from them being delicious and healthy, I love how pretty they are and how creative you can get with them. This one is a simple blend of lemon yogurt (probiotics…boom) chia seeds, frozen berries, fresh raspberries, lemon zest and some goji berries thrown in. This is super tasty as is, but I would also recommend throwing in some silken tofu next time for added creaminess, and protein.
Without further ado, let’s get to it!
Simple Berry Lemon Smoothie Bowl
Fresh, tasty and good for you.
- 5 oz lemon yogurt
- 1/2 cup milk (I used almond milk)
- 1 cup frozen berries (I used raspberries, blueberries and blackberries)
- 1 tsp chia seeds
- lemon zest (to taste)
- 1/4 cup silken tofu (optional)
Add all ingredients into a blender and blend until smooth.
Top with fresh berries like raspberries or blackberries, lemon zest, chia seeds and even dried goji berries.
This can be tweaked very easily depending on how thick you like your smoothie bowls. Have fun with it!
