I love bananas. I also love Gwen Stefani for helping me spell bananas correctly every time. Thank you, Gwen. Today we’re going to talk about something I love even more though, these Gluten Free Banana Blondies.
Because we all love bananas in my household, my father in law (bless his heart) buys tons of bananas from Costco each week. Costco is awesome, but sometimes buying fruit and veggies there can be problematic. Yes, we get oodles of delicious, usually organic bananas, but unless I eat 2 or 3 a day, we usually end up with some pretty brown ‘nannas in the end.
This in and of itself is not a bad thing at all though. I mean I AM a food blogger so that just means I get to share some tasty recipes that just might include bananas every now and then. That’s not a big deal, right? In fact, check out this one right here.
This recipe is originally found on an awesome blog called Cookies and Cups. I certainly recommend checking out the original post. Its pretty funny and super helpful. I tweaked this only so that it was gluten free. Because the recipe is so awesome and straight forward, it was easy. All I did was swap out the flour for my favorite gluten free flour by Bob”s Red Mill, boom. Done.
In the original recipe, they talk about either browning the butter or not browning the butter. BROWN THE BUTTER! It takes a few extra minutes, but it’s so worth it. The flavor of these oooey, gooey magic bars is unlike anything you’ve ever had. Your life is about to change.

Gluten Free Banana Blondies
Your world is about to be rocked.
- 1/2 cup butter, browned or just melted
- 1 cup light brown sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1/4 tsp salt
- 1 cup gluten free flour
- 1/2 cup mashed banana
For the Frosting
- 1/2 cup butter
- 1/2 cup light brown sugar
- 2 tbsp milk
- 1 cup powdered sugar
For the blondies
Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with cooking spray. Set aside
In bowl of stand mixer combine melted (or browned) butter and sugar. Mix until combined. Add in egg and vanilla and continue mixing until incorporated. Stir in salt, flour and banana until batter is smooth and even. Spread in prepared pan
Bake for 25-30 minutes until center is set
Transfer pan to wire rack to cool. Then, frost the blondies when they are mostly cooled. Approx 15 minutes
For the frosting
In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
Stir in powdered sugar with a whisk.
Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.
